01 / ABOUT THE PLACE

About this place

The pale niboshi ramen draws out the gentle umami of dried sardines without astringency, showcasing the clean snap of thin house-made noodles. When a heavier bowl is called for, the shop's Tsubame-style back-fat niboshi ramen layers pork back fat over the clear broth and pairs it with hand-kneaded thick noodles. Other regular preparations highlight different textures and flavor balances: the pale niboshi tsukemen brings out slight sweet and tart notes through seasoned vinegar in the dipping broth, while the Musashino abura soba coats extra-thick noodles in aromatic oil and rich soy sauce tare for custom seasoning at the counter.

Alongside the core niboshi repertoire, a rotating roster of special bowls draws regular diners back. Standouts include Motsu Sta, which combines tender offal with a savory-sweet soup, and ginger shoyu ramen with a pronounced ginger bite. Heartier specials piled with vegetables and roast pork or recipes showcasing uncommon seasonal ingredients also appear from time to time.

The dining room is compact and focused around counter seating, making it comfortable for solo visits. It suits a fast lunch during the day, as well as an evening meal accompanied by a beer or highball while waiting for your bowl.
